Pumpkins:

Ingredients:

2 1/2 cups all-purpose flour
2 cups of whole wheat flour or gluten free flour
1 tbsp of baking powder
2 tsps of baking soda
2 tsps of sea salt
2 large eggs or egg substitute
2 egg whites or egg substitute
2 cups of coconut sugar
2 cups of pumpkin puree
1/2 cup of coconut oil

Directions:

1. Preheat oven to 350 F. Cover two 9×5 inch loaf pans with olive oil

2. In one bowl, mix all-purpose flour, whole-wheat flour, baking powder, baking soda and salt

3. In another bowl, mix eggs, egg whites, coconut sugar, pumpkin puree, and coconut oil

4. Add pumpkin mixture to dry mixture and mix until combined, then scrape mixture into loaf pans evenly

5. Bake in the oven for 50-60 minutes. Use a cake tester to make sure the cake is fully cooked through. Let it cool for 10 minutes.
