The great thing about soup is that it is easy to make, and it combines all the nutrients in the healthy foods that you use and keeps them alive and potent in the bowl. This healing kale and garlic soup recipe is packed with fresh, nutritious foods. Let’s take a closer look at the ingredients.
Carrots:
These deliciously orange vegetables are an excellent source of beta-carotene, which is a potent infection fighting antioxidant and immune booster.
Celery:
It contains a category of antioxidants called phenolic antioxidants, which also have anti-inflammatory properties. Antioxidants help eliminate free radicals in the body, which are toxins known for causing serious diseases including cancer. Celery has high water content, so it is also great for skin health and hydration.
Garlic:
This herb is a potent healing medicine. It has strong anti-inflammatory properties and is even known to reduce the inflammation caused by arthritis.
Kale:
It is an excellent source of two powerful antioxidants called carotenoids and flavonoids. These antioxidants protect our bodies from harmful oxidative stress. They also contain important flavonoids like kaempferol and quercitin, which it thought to kill certain types of cancer cells.
Lemon juice:
It is high in vitamin C, which helps strengthen the immune system, and also flushes out toxins by acting as a diuretic.
Lentils:

Tomatoes:

Directions:
• Heat a large pot with medium heat
• Add garlic and cook lightly over low heat for 5 minutes, stirring often
• Add 3 carrots (chopped) and 3 stalks of celery (chopped), and cook for 3-4 minutes
• Then, add 8 cups of filtered water, 4 diced tomatoes, and 2 cups of lentils
• Simmer with stove on low heat for 30 minutes
• Add 3 handfuls of kale, chopped 15 minutes before serving
• Cook for 5 minutes, then add the juice of 1/2 a lemon
• Add Himalayan pink salt and freshly ground black pepper to taste
• Serve
