One of the things most associated with Halloween is pumpkins. That’s why this recipe is so fitting for the holiday. The bonus is that the seeds don’t go to waste, even when using the pumpkins for carving.
Let’s take a closer look the ingredients in this Halloween sea salt roasted pumpkin seeds.
Olive oil:
It has a wide variety of polyphenols, which are substances found in olive oil (and many other foods) that help reverse pro-inflammatory enzymes and molecules in the body. Just 1-2 tablespoons of olive oil a day can help with inflammation.
Pumpkin seeds:
Pumpkin seeds have been used for years because of their antimicrobial properties. They are rich in antioxidants, and minerals such as calcium, iron, magnesium, phosphorus, potassium, zinc, copper, and manganese.
Sea salt:
It is a healthier option than table salt. What makes it healthier is the way that it is gathered. Sea salt is unprocessed and additive-free, just the way nature intended.
Directions:
• Open up a pumpkin and remove the seeds
• Put seeds in a colander and run under water to clean up seeds
• Bring water to boil in a pot and boil seeds for 10 minutes
• Make sure your water has 1 tbsp of sea salt for every 1/2 cup of pumpkin seeds
• Let the seeds simmer for 10 minutes
• Remove from heat and drain
• Preheat oven to 400 F
• Coat a roasting pan with olive oil
• Spread seeds on roasting pan, making sure to coat lightly with olive oil
• Bake on top rack for 5-20 minutes, until golden brown
• Smaller seeds may only take 5 minutes, while larger seeds can take 20 minutes
