- A healthy pesto recipe packed with nutritional ingredients from our kitchen to yours.
- This is a raw recipe with no cooking involved. To top it off, this pesto is ideal as a freezer pesto and can keep up to 6 months.
- Parsley is packed with anti-inflammatory agents such as luteolin and vitamin C.
- Fresh basil is full of important antioxidants, such as eugenol. This compound is a potent fat-soluble antioxidant, which means it helps prevent the oxidation of fats.
- Pine nuts are packed with good proteins and are a good source of monosaturated fats which are known to lower bad cholesterol.
- Garlic add a delicious flavor to the pesto and brings even more anti-inflammatory benefits.
- Raw pesto recipe:
- Ingredients:
3 cloves garlic
- 1/3 cup raw pine nuts
- 1/2 cup pumpkin seeds (optional)
1 cup fresh basil
1 cup parsley
- 1 tsp of oregano extract (or a few oregano leaves)
- 1tsp dried thyme (optional)
- 2/3 cup raw olive oil
- 2 tbsps lemon juice
- Directions:
- Blend the parsley, basil and olive oil.
- Add the peeled garlic, pine nuts, seeds, salt and lemon juice.
- If you are using pumpkin seeds, please soak them overnight.
- Store in small BPA-free glass jars, or better yet put in BPA-free ice cube trays and pop a cube when needed.
- Keep refrigerated for 1 week.
- Freezes up to 6 months
