Healthy cauliflower mashed potatoes

These healthy cauliflower mashed potatoes are a great alternative to regular mashed potatoes if you are looking for a low-carb substitute.

Cauliflower is a part of the cruciferous vegetable family. Cruciferous vegetables are packed with compounds called glucosinolates, which have potent anti-cancer properties.

Let’s take a look at the rest of the ingredients in these healthy cauliflower mashed potatoes.

Black pepper:
It is the most popular spice in the world, and for good reason. It speeds up metabolism, which is great for weight loss. An ingredient in black pepper called piperine inhibits the spreading of rectal cancer cells, according to a study published in Experimental and Molecular Pathology.

Himalayan salt:
It is an unprocessed, unrefined, and raw salt, packed with many essential ingredients like nature intended.

Ingredients: 

2 heads of cauliflower
Freshly ground black pepper
Himalayan pink salt
1 tbsp butter
1/3 cup of milk
6 oz cream cheese
Chives

Directions:

 

 

Separate the cauliflower into florets and get rid of the core.

 

 

Bring 2 cups of water to a simmer in a saucepan, and then add the cauliflower. Cover the pan and bring the heat down to medium. Cook the cauliflower for about 13 minutes, until the cauliflower is tender.

 

 

Drain the cauliflower in a colander. Add the cauliflower, milk, butter, salt, and pepper and cream cheese to a bowl, and mash with a potato masher until creamy like mashed potatoes. Top with chopped chives.
