Summer fruit and quinoa salad
Summer is a time of delicious and vibrant fruits that are packed with health benefits. With fruits like watermelon, pineapple, mangos, peaches, and kiwis, you simply can’t go wrong. This summer fruit and quinoa salad is just what you need to enjoy the warmer weather. Let’s take a closer look at the ingredients.
Kale:
It is an excellent source of two powerful antioxidants called carotenoids and flavonoids. These antioxidants protect our bodies from harmful oxidative stress. They also contain important flavonoids like kaempferol and quercitin, which it thought to kill certain types of cancer cells.
Oranges:
Is there a fruit more associated with a strong immune system? These delicious citrus fruits are one of the best sources for vitamin C, which is believed to bolster the immune system.
Peaches:
Speaking of delicious summer fruits, peaches are right up there with the best. They are a great source of vitamin A, vitamin C and dietary fiber. Peaches have shown many benefits, including heart health and anti-cancer properties.
Quinoa:
Quinoa is quickly replacing rice and other types of grains because of its superior health benefits. It is high in fiber, and packed with anti-inflammatory and antioxidant benefits. It is also low-glycemic, meaning it doesn’t cause blood sugar spikes.
Directions:
Put 1 cup of quinoa in a saucepan and cover with water
Bring to the boil and bring heat down to a simmer for 20 minutes
Drain the water from the quinoa
In a bowl toss the quinoa with:
3 chopped peaches
1 beet, chopped and cooked
1 sliced orange
1 handful of kale, chopped
1 handful of mint, chopped
Juice from 1 lemon
4 almonds, chopped
2 tbsps of olive oil
Make sure ingredients are organic
