Soup, like smoothies and juices are a great way of combining multiple healthy ingredients into one. This makes soups a very convenient food, and keeps the health benefits alive and potent in the bowl. This easy to make cancer-fighting broccoli and garlic soup is packed with potent anti-cancer foods. Let’s take a closer look at the ingredients.
Broccoli:
Broccoli contains a substance called glucoraphanin, which is turned into sulforaphane in the body. Sulforaphane rids the body of the bacteria H. Pylori, which is linked to gastric cancer. Broccoli is also high in indole-3-carbinol, which according to the Linus Pauling Institute is thought to stop the growth of cervical, prostate, and breast cancers.
Garlic:
Garlic has potent antioxidant and anti-cancer proeprties. Cancers such as melanoma, prostate cancer, and some types of leukemia weaken the body by over-driving the immune system. Researchers from the University of Copenhagen discovered that selenium, a nutrient found in broccoli and garlic slows down the immune system over-activity caused by these cancers.
Olive oil:
Olive oil is considered one of the healthiest oils. It is packed with healthy fats that contribute to overall health. New research from the University of Navarra in Pamplona and CIBEROBN in Madrid, Spain shows that the Mediterranean diet and olive oil reduces breast cancer risk.
Directions:
• Add 2 cups of broccoli, 2 cloves of peeled garlic, and 3 cups of chicken stock to a pot
• Bring to a boil, reduce heat, and cover
• Simmer for 10 minutes
• Then transfer mixture to a blender, and puree until smooth
• Add a few pinches of salt and 1 tsp of black pepper to taste
• Drizzle with 1 tbsp of olive oil
• Serve
